How to Prepare Tomatoes and Peppers for a Flavoursome, Yummy and Zesty Nigerian Sauce or Stew Recipe

While our cooks are in the Kitchen preparing for today’s orders, I want to use the opportunity to write this Blog and post it this morning before joing then in the Kitchen: How to Prepare Tomatoes and Peppers for a Flavoursome, Yummy and Zesty Nigerian Sauce or Stew Recipe – Parboiling the Tomatoes and Peppers!
Preparing Tomatoes and Peppers is very important, and it’s also the secret of the taste of our Sauce / Stew we cook and deliver to our numerous Customers – either Cow Meat Sauce; Goat Meat Sauce; Chicken Sauce; Roasted Catfish Sauce; Roasted Turkey Sauce; Snail Sauce; Gizzard Sauce etc., we make sure we spend more time preparing the Tomatoes and Peppers.
Of course, the results of our cooking are always FLAVOURSOME, YUMMY and ZESTY!
This is also how we prepare Tomatoes and Peppers when cooking Jollof Rice.
Parboiling the Tomatoes and Peppers is a cooking method that removes the sourness from the taste of the Sauce or Stew to give it the DELECTABLE Taste.
Parboiling also allows food to be cooked quickly, preparing it for other recipes and freezing.
The Sensation of TASTE can be categorized into five basic tastes: Sweetness, Sourness, Saltiness, Bitterness, and Umami.
Now, talking about Tomatoes, I love and prefer Plum or Roma Tomatoes - they are more similar. Plum or Roma Tomatoes are referred to as Jos Tomatoes; they are the best Tomatoes for Nigerian Dishes; they have less water; they have less strong taste; and contains less seeds.
Please, see below for the Ingredients and Recipe (Directions or Instructions) on how to Preparing Tomatoes and Peppers for a Flavoursome, Yummy and Zesty Nigerian Sauce or Stew for 5 People:
Ingredients:
8 medium size of Plum or Roma Tomatoes (Jos Tomatoes)
6 medium size of Bell Peppers (Sweet Pepper)
10 Hot Peppers (small Hot Pepper / Chilli)
8 Pieces of Cayenne Peppers
2 medium size of Onions
6 Cups of Water to Cook
Recipe (Instructions and Directions):
Wash your Hands Clean with any good Hygienic Kitchen Detergent of your choice
Remove the Stem of the Tomatoes and Peppers (Bell, Hot and Cayenne Peppers)
Wash the Tomatoes and the Peppers (Bell, Hot and Cayenne Peppers)
Soak the Tomatoes and the Peppers in a Bowl of a mixture of 1/8 Cup of Distilled Vinegar and 4 Cups of Water for about 2minutes
Rinse the Tomatoes and Peppers with water, and put in a sieve to remove excess water before STEP6
Slice each Tomato into 4 pieces
Turn all sliced Tomatoes into a medium pot on a slow heat
Add 1 Cup of water and allow to boil for 10minutes, with the pot well covered
Turn the boiled tomatoes into a sieve, and put on a bowl to drain the water
Transfer the Peppers into a medium pot on a slow heat
Add 2 Cups of water and allow to boil for 10 minutes, with the pot well covered
Turn the boiled Peppers into a sieve to drain the water
Working in small batched, transfer the boiled Tomatoes and Peppers into a Blender
Peel and cut the 2 medium of Onions and add to the boiled Tomatoes and Peppers in the Blender - you don't need to wash Onions.
Add 2 Cups of water into the Blender
Puree (blend) it until it’s smooth in consistency
Transfer the pureed boiled Tomatoes and Pepper into a pot, then puree another batch
Continue until all the boiled Tomatoes and Peppers have been pureed, transferring the pureed into the pot
Add a Cup of water into the pot containing the pureed Tomatoes and Peppers - please, do adjust water for thick or thinner puree
Put the pot of pureed boiled Tomatoes and Peppers on a slow heat and allow to boil for 30minutes, stirring every 5minutes
Allow to cool, and the Tomatoes are ready for a Flavoursome, Yummy and Zesty Nigerian Sauce or Stew
