Ingredients for Yoruba Ewedu Soup:
1 medium bunch of fresh Ewedu Leaves (a medium bunch of Ewedu Leaves is NGN50.00 from our Local Markets)
1 cup of Water (30cl) to cook
1 teaspoon Locust Beans (Optional)
2 Spoonful of Grinded Egusi (Optional – add when making Ewedu Elegusi)
2 Knorr Cubes (Chicken or Beef Flavour)
Iodized Salt to taste (Salt that has been fortified with an essential trace mineral known as Iodine)
Recipe (Instructions or Directions) to Cook Yoruba Ewedu Soup:
Wash your Hands Clean with any good Hygienic Kitchen Detergent of your choice
Remove the Ewedu Leaves from the stem and clean properly with water to remove sands
Soak the Ewedu Leaves in a Bowl of a mixture of 1/8 Cup of Distilled Vinegar and 4 Cups of Water for about 2minutes
Rince the Ewedu Leaves with water, and put in a sieve to remove excess water before STEP5
Put the Ewedu Leaves in a Blender Machine Cup
Add 1 Cup of Water (30cl) into the Blender Machine Cup and finely chop (cut into small pieces) the Ewedu Leaves
Turn the finely chopped Ewedu Leaves into a medium size pot on a low heat
Add a teaspoon of Locust Beans (Optional: some people do not like Locust Beans)
Add 2 spoonful of Grinded Egusi (Optional: add when making Ewedu Elegusi)
Add 2 Chicken Knorr Cubes, Iodized Salt and Stir
Taste and adjust for seasoning
Ensure the total cooking is not more than 10minutes from STEP3 – by which time the Ewedu Leaves would have been very tender.
