Yoruba Gbegiri Soup Recipe - How to cook Yoruba Gbegiri Soup!

Ingredients for Yoruba Gbegiri Soup for 10 People:

  1. 2 Handful of Brown Beans (Oloyin, Olo1 or Olo2 Beans)

  2. 4 Cups (a Cup is 30cl) of Water to cook

  3. 1 Standard Cooking Spoonful of Red Oil (Palm Oil)

  4. 1 ½ Table Spoon of Kaun (Akaun) Powder – Cooking Potash Powder

  5. 2 Knorr Cubes (Chicken or Beef Flavour)

  6. Iodized Salt to taste (Salt that has been fortified with an essential trace mineral known as Iodine)

Recipe (Instructions and Directions) to Cook Yoruba Gbegiri Soup:

  1. Soak the Brown Beans in water for 30minutes to allow it become very soft

  2. Wash your Hands Clean with any good Hygienic Kitchen Detergent of your choice when you are ready to start STEP3

  3. Remove the back or coat of the Brown Beans using your hands to wash; using water; and sieve – at this time, the Brown Beans would now be called “Peeled Brown Beans”

  4. Turn the clean Peeled Brown Beans in a medium pot, and add 2 Cups (a Cup is 30cl) of water on a high heat

  5. Cook for about 30minutes, and make sure the Peeled Brown Beans is very tender - please, do not cover the medium pot while cooking, as the Peeled Brown Beans will overflow the brim of the pot while cooking

  6. Add the Peeled Brwon Beans in a Blender Machine

  7. Add the 1 ½ Table Spoon of Kaun (Akaun – Cooking Potash) Powder to the Peeled Brown Beans in the Blender Machine

  8. Add 1 Cup (a Cup is 30cl) of water to the Mixture of Peeled Brown Beans and Kaun (Akaun – Cooking Potash Powder) Powder, and chop until the mixture is finely chopped, to form a paste (please, do note that at this stage, you adjust the Cup of water to make sure the paste is not too thick)

  9. Turn mixture of finely chopped Peeled White Beans and Kaun (Akaun – Cooking Potash Powder) back into the medium pot on a slow heat – please, note that from STEP9, you don't have to cover the medium pot till you are done with the cooking, as the mixture of the Peeled Brown Beans with Kaun (Akaun – Cooking Potash Powder) and Red Oil (Palm Oil) on a slow or high heat will overflow the brim of the medium pot

  10. Add 1 Standard Cooking Spoonful of Red Oil (Palm Oil)

  11. Add 2 Cubes of Knorr (Chicken or Beef Flavour)

  12. Add Salt to taste (please, do adjust for seasoning)

  13. Cook for another 20minutes adding water to the quality of thickness of your choice, and continue to stir until it gives the Gbegiri Flavour, which when you know it's DONE!

  14. Gbegiri is ready to be served
